Tips ∞
Freeze overripe bananas either in their skins (the skins will turn black but the bananas are good for baking when thawed) or peel, mash and freeze in airtight containers or bags.

Banana Chocolate Chip Bread ∞
dry ingredients in bowl A:
- 3 C flour
- 1 1/2 C white sugar
- 2 t baking powder
- 1 t table salt

Caribbean Banana Bread ∞
- Large Loaf
- 1/3 C water
- 3/4 C mashed very ripe banana (seems like 1.5 average-sized bananas)
- 2 T vegetable oil, margarine or butter (used olive oil)
- 1 large egg
- 3/4 t salt
- 3 T brown sugar, packed

- In Canada use all-purpose or bread flour; in the United States use bread flour.

- Add all ingredients except raisins and nuts to machine according to manufacturer’s directions. Select sweet or white cycle.

Add raisins and nuts at ingredient signal (or about 20 to 30 minutes into cycle after the starting time).

If you don’t want to use yeast is to mix it outside of the bread machine first, then use the Quick Bread setting to bake it.
- 1/2 cup butter, melted
- 2/3 cup milk
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1 cup white sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt

1 cup mashed bananas (1 large, 2 small, etc.)
DIRECTIONS:
- Spray bread machine pan with vegetable oil spray.
- In a separate bowl, premix ingredients in order listed.
- Place mixture in bread machine pan.
- Select the Quick Bread/Cake cycle. Press Start. Check after 1 minute to see if mixture is well blended.

Bake until cycle stops. Remove the pan, and cool completely (15-30 minutes) before removing bread from pan.
Banana Chocolate Chip Bread Recipe ∞
- 1/2 cup milk
- 1/2 cup very ripe bananas, mashed
- 1 large egg
- 1 tablespoon butter
- 1 teaspoon salt
- 3 cups bread flour
- 1/3 cup semi sweet chocolate chips

2 tsp bread machine yeast
Add ingredients in order given by manufacturer, adding mashed bananas with the milk and chocolate chips with the flour. Basic/white bread cycle. Light color setting.
Note: How the bread turns out will depend on your breadmaker. Some machines will make a smooth chocolate colored bread. Others will leave bits of chocolate chips, and still others will give a marbled loaf.
Banana Wheat Bread ∞
- 1 pkg yeast
- 1 1/2 cup bread flour
- 1 1/2 cup wheat flour
- 1/2 tsp salt
- 2 medium ripe bananas, sliced
- 1/4 cup honey
- 1/4 cup warm water
- 1 egg
- 1/4 cup oil
- 1/2 tsp vanilla

1 tsp poppy seeds (optional)
Add ingredients into the pan in order recommended for your machine, select white bread, and push start.
Banana Bread – Quick Bread for Machines ∞
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 cup white sugar
- 3 tablespoons vegetable oil
- 2 eggs

2 bananas, peeled and halved lengthwise
- Place ingredients in the pan of the bread machine.
- Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing. Smooth out the top of the loaf with the rubber spatula.

Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is dough on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to assure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. Remove the bread to cool completely on a wire rack.
