So-called "healthy" pasta still has some interesting ingredients.
- Durum whole wheat semolina
- Folic acid (Vitamin B9)
- Ferrous sulphate
- Riboflavin (Vitamin B2)
- A manufactured Thiamine (Vitamin B1)
Let's see if I understand this correctly. Thiamine decomposes with heat. Nitrate salts are an ionic compound which are soluble in water. So.. I boil my pasta and the Thiamine breaks down, releasing the mononitrates. Hmm.
I found some nice pasta from these guys. The ingredients are "Durum wheat pasta". Now, I would rather have seen "whole wheat" but it's better than nothing.
