Harvest down near the roots. You can take quite a lot of the white part.
They eventually lose flavor if you keep growing them in H20 like in the pics. I eventually decided to pot them. So much better.

They’re actually easier to grow from seed IMO. I toss a handful of seeds out every 2 weeks all spring and summer long, always [have] scallions.
